What to do With Leftovers
Every once in a while I like to add a meal packed with protein. This weekend I baked chicken breasts. I always make more than we need so we have left overs during the week since it makes for an easy meal with very little prep time. Another plus is when you buy them in large quantities you pay less and get more. Leftovers can be boring and since Google is my friend and maybe yours, too, I looked up recipes for shredded chicken. There were several I really liked. I took a few ingredients from each and sort of mixed and matched and came up with this recipe.
I was going to buy tortillas and fry them up, however, when I was in the store this week I saw the little Pillsbury Dough boy and thought to myself “this would be so easy to make” and here we are. I’m sharing my recipe with you and hopefully you will find it as easy to make as I did.
Both my son and I got a couple of meals this week. I added an avocado and tomato for taste. Of course, you are free to add anything that strikes your fancy. Next time I will probably vary the recipe by adding carrots and celery, maybe hard-boiled eggs. Adding fresh spinach is probably a good idea, too. This is the kind of dish you can make your own!
I did prepare this recipe two ways, one with Pillsbury and one without for those who are counting carbs. There approximately 10 carbs, if that, in this recipe, perfect if you are counting or on a keto eating plan.
- 2 chicken shredded breasts (baked)
- 6 ounces of cream cheese (softened)
- 1/4 cup of sour cream
- 1/3 cup cheddar cheese
- 1 green pepper diced
- 1 scallion diced
- 1 pinch of salt and pepper
- 1 pinch of paprika
Step 1: In a large bowl, add the shredded chicken and salt, pepper and paprika and combine thoroughly. Next add diced scallion and green pepper.
Step 2: Combine softened cream cheese, cheddar cheese and sour cream and combine.
Step 3: Line nonstick muffin tin with Pillsbury pastry.
Step 4: Fill pastry with large scoop of chicken breast mixture.
Step 5: Bake in oven at 350 degrees for a half hour.
